On a special evening at St. Honoré Boulangerie’s NW Thurman location, guests are invited to experience the warmth, hospitality, and flavors of Alsace through wine, food, and community.
Hosted in partnership with the Fine Wine Circle PDX, this intimate gathering brings together the acclaimed Trisaetum Winery and Chef Dominique Geulin for an evening inspired by the generous spirit of Alsatian dining.
The experience begins with an educational tasting featuring a curated selection of Trisaetum wines, including Riesling and Pinot Noir, served in Riedel glassware and guided by members of the winery team. Guests will explore expressive wines shaped by the unique terroir of Oregon’s Willamette Valley.
Following the tasting, the evening continues with a generous Alsatian-inspired buffet prepared by Chef Dominique Geulin, featuring classic regional dishes such as tartes flambées, charcuterie, artisan cheeses, and dessert, all designed for sharing around communal tables.
At the heart of the Fine Wine Circle experience is connection. Whether attending with friends or arriving solo, guests are welcomed into a convivial atmosphere centered around conversation, discovery, and the simple pleasure of enjoying exceptional food and wine together.
About Trisaetum Winery
Founded in 2003 by James and Andrea Frey, Trisaetum Winery was born from a leap of faith and a deep commitment to place, family, and craftsmanship. Located just outside McMinnville in Oregon’s Willamette Valley, the winery takes its name from the couple’s children, Tristen and Tatum.
Winemaker and artist James Frey approaches wine as a form of expression, allowing each vineyard and vintage to reveal its own character through thoughtful farming and minimal intervention. Today, the winery has gained international recognition for its Pinot Noir, Riesling, and sparkling wines.
In 2025, Trisaetum welcomed its second generation into leadership, with Tristen Frey, Tatum Harloff-Frey, and Jackson Harloff-Frey joining the winery and spirits programs. Together, they continue the family’s dedication to expressive, terroir-driven wines.
