A chocolate crème mousseline made with semi-sweet chocolate, crème pâtissier and pure butter cream, rolled with a light textured, souffle style cocoa sponge. It is frosted with a chocolate buttercream made with 64% chocolate imported from France, and garnished with crystalized cranberries from Oregon, hand-made meringue mushrooms and dark chocolate leaves.
