The clafoutis is a traditional dessert from Central France. The best-known clafoutis is Limousin-style clafoutis with black cherries baked in a custard batter. The top is lightly dusted with powder sugar. St Honore's clafoutis is gluten-free as we use a gluten-free flour blend (in place of wheat flour) in our recipe. Clafoutis can be made with other types of fruits. We will use other types of fruits such as yellow peach, when the cherry season is over. It's good served at room temperature, chilled, or lightly heated if desired.

The Paris-Brest is traditionally a wheel of choux pastry sliced in half, filled with hazelnut praline cream, and topped with a crispy crust of slivered almonds and powdered sugar. Invented in 1910 by pastry chef Louis Durand to celebrate the Paris-Brest bicycle race, the dessert has become a classic and is found in pastry shops all over Paris. But who makes the best?

We will make this dessert available during the race in July, to celebrate Tour de France season and the history of bike races in France. Available in small and large sizes.
