Pastries
Master Baker, Dominique Geulin and our baking team – many students at Portland’s Western Culinary Institute -- combine the best of French bread baking with the fine art of pastry design. The colorful display of pastries, made fresh every day, replicates what Dominique learned growing up in his family’s boulangerie in Normandy. One of our popular pastries is the Paris-Brest, created by a pastry chef in the French town of Brest in honor of the cyclists on the Paris to Brest race. Shaped like a bicycle wheel and humorously referred to as the “French doughnut,” this treat is filled with a hazelnut praliné butter cream with toasted almonds.
