Ingredients from brie and gnocchi to caramelized pears and raspberry mousseline stir up an appetite

PORTLAND, Oregon (March 1, 2006) --Dominique Geulin, baker and owner of St. Honore Boulangerie, has added some new soothing winter treats to the menu. "I remember Normandy winters and how good it felt to bite into a warm croissant," said Geulin. The new items recall childhood meals, but Geulin has added some more modern twists with his Salmon Gnocchi , a play on the popular dumpling. The other items, including a Brie Bartlett and a Croissant Campagnard , as well as Hazelnut Caramel Dacquoise are more traditional.

New items include:

Salmon Gnocchi with a shrimp béchamel sauce with asparagus spears, topped with parmesan gratinee ($7.75)
Brie Bartlett, a panini roll drizzled with olive oil and balsamic vinegar, layered with proscuitto, brie, caramelized Bartlett pear and onions with arugula ($6.75)
Croissant Campagnard, a croissant filled with a shallot mushroom cheese sauce with chicken apple sausage and a poached egg. ($6.25)
Hazelnut Caramel Dacquoise, a rich and crunchy layer of milk chocolate hazelnut praline with a smooth layer of hazelnut praline buttercream and a dense layer of caramel ganache between two layers of hazelnut Dacquoise cake. ($5.75)
Raspberry Delice , double layers of puff pastry with a delicious raspberry mousseline and joconde cake and raspberry gelee. ($5.25)
